Eating habits can improve slowly. For instance, if you ask a hardcore junkie to leave burgers and other junk food, first it will be impossible for him/her to do. So, here we are getting started with some dishes which one can have without getting a feeling of impossible and leaving anything behind.

I heard about this grain from one of my friends who is a fitness enthusiast. In this blog, I am going to share a recipe which is an Indian salad having a cooking time of almost 20 mins.

QUINOA MIX :

Lets first understand what Quinoa is? Quinoa is a flowering plant in the amaranth family. It is a herbaceous annual plant grown as a crop primarily for its edible seeds; the seeds are rich in protein, dietary fiber, B vitamins, and dietary minerals in amounts greater than in many grains.

You can purchase quinoa from online platforms like Amazon, Flipkart, BigBasket, Groffers, etc but it will be costly. I would recommend you to purchase it from Reliance smart or Jiomart.com if it is available near you. If not then you have to rely on the above-said options.

Raw material which will be required for the dish would be Quinoa grains, Green Chilli, Capsicum, Cottage Cheese (Paneer), Onion, Cherry tomatoes, Cucumber, Beet Root, Black pepper, Cumin Seeds (Jeera), Himalayan rock salt, coconut oil, Apple cider vinegar (Optional), Turmeric (Optional). we can also add broccoli, zucchini etc as per your choice and taste.

Cooking Method:

  1. First of all, we need to boil half a cup Quinoa in 1 cup of water for at least 7-10 mins or till the time it softens; on medium flame. You can also do this in a pressure cooker as well. Add a little salt while boiling. Remove the contents of the pan in a vessel and drain excess water if any.
  2. Cut Onion, Tomatoes, Green Chilli, Cottage Cheese, Cucumber, Beetroot, Capsicum etc in small sizes.
  3. Take a pan on medium flame and add coconut oil in it. Let it heat and add some Cumin Seeds, Green chili, Onion, Capsicum and saute for 3 mins on medium flame. Now add some Himalayan rock salt and Turmeric.
  4. At this time, add cottage cheese cubes in the pan with boiled quinoa, mix it well and let it heat for 2 – 3 mins. Now add a teaspoon of Apple cider vinegar and again mix well.
  5. Remove the contents of the pan in a serving bowl. Now add Cucumber, Cherry tomatoes, Beetroot in the serving bowl. Sprinkle Black pepper and garnish it the way you want.
  6. Your healthy dinner/lunch / mid-day meal is ready in just 20 mins.
